Since I'm busy working on the deadline quilt, I'll post this recipe in case you have a graduation party coming up and need something simple to take along. (Photo borrowed from web) Easy Chocolate Chip Cheesecake
1 - 6 oz. graham cracker (or chocolate) pie crust
1 - 14 oz. can sweetened condensed milk
2 - 3 oz. packages of cream cheese, softened
1 egg
1 teaspoon vanilla extract
1 cup mini milk-chocolate (or semi-sweet) chocolate chips
1 teaspoon flour
Chocolate glaze *
1. Preheat oven to 350 degrees Farenheit. In a medium bowl, with mixer, beat cream cheese until fluffy; gradually beat in condensed milk until smooth. Add egg and vanilla; mix well.
2. Toss chocolate chips with flour; stir in to cheese mixture. Pour into crust.
Bake 35 minutes or until center springs back when lightly touched. Cool and top with glaze. Serve chilled. Refrigerate leftovers.
* Glaze: In small saucepan, over low heat, melt 1/2 cup chocolate chips with 1/4 cup whipping cream. Cook and stir until thickened and smooth. Immediately spread over pie.
Until then, keep stitchin' (or bakin') . . .
